Manuka honey (Leptospermum scoparium) is dark amber in colour. Its aroma is intensely floral, reminiscent of wet earth and fresh menthol. Its flavour is very different from other honeys, very intense and even a little spicy. Its texture is highly viscous and consistent. It is slow to crystallize in large crystals.
